Add Depth and Creaminess to Ceviche With Coconut Milk

A simple lime-flavored ceviche is surprisingly easy to make at home and deliciously refreshing on its own, but if you want a little creamy sweetness add some coconut milk.

The Saveur recipe (link below) gets the acid from vinegar, not lime juice (although it does have a bit of lime for flavor), which saves a little time. Coconut milk not only balances all this acidity, but also adds a juiciness and creamy sweet taste. Of course, you don’t have to stick to the vinegar-based recipe below; almost any ceviche recipe will benefit from enhancing the coconut flavor.
