Mini Pie Cupcakes – More Controllable Cousin of Piecaken
I’m sure you’ve seen a great dessert known as “piecaken,” in which whole pies are baked inside a cake and stacked on top of each other. They are definitely awesome, but annoying. Fortunately, Melo the Rat from Melodrama has reduced the whole process to a mini pie pie.
To make these adorable little pearls of flavor, you’ll need mini tarts (Trader Joe’s has a great frozen cake mix) and a cupcake recipe (Melo has an excellent one at the link below). Pour the dough into a muffin tin lined with muffin liners and insert the (thawed) mini pie into there. Pour more batter over the top and tap the whole jar on the counter several times to make sure there are no gaps. Bake at 350F for about half an hour, cool, cool and enjoy the most adorable little Frankenfood you will ever see.
