Like most foods, freezing eggplants is a great way to keep them fresh for longer. However, before throwing some in the freezer, bake quickly first.
As Kelly Foster of The Kitchn explains , eggplants do not freeze well raw due to their high water content. If you’ve just stocked up at a farmer’s market or grocery store and want to store them in large quantities, Foster recommends cutting them into slices or circles and baking them. Make slices or circles about one inch thick, then place them in the oven at 350 ° F for about 15-20 minutes. After letting them cool, place the slices or circles on wax paper, place them in freezer bags, and toss everything in the freezer.
