Cucumbers can be bitter because of cucurbitacin , a compound found in a number of other plants, such as squash and pumpkin. Cucumbers have a high concentration of cucurbitacin at the ends of the cucumber, so chopping them off will reduce the bitterness. You can take it one step further by peeling the skin of the cucumber first.

Cucurbitacin is also found in the peel, Epicurious explains. Many people cut a cucumber and then peel it to get rid of the bitter taste. However, there is a better way:

Always trim off the ends of your cucumbers before peeling them. If you don’t, every time you peel a cucumber with a peeler, you will spread the bitter cucurbitacin to the rest of the vegetable.
