Bake Super Tall Soufflés With a Pastry Brush

Even if you follow the soufflé recipe exactly , sometimes they just don’t grow that high. Fortunately, The Kitchn has a little trick to help your soufflé grow high into the sky. All you need is a baking brush and some sugar.

To help you soufflé up and down, brush the butter up the sides of the serving pot with the cookie brush rather than rubbing it around willy-nilly. Then sprinkle something on the tins – sugar for a sweet soufflé, Parmesan for savory dishes – to hold the dough during baking. These two simple steps will help lift the souffle into place (where the eagles cry, etc.).
