Use Leftover Hot Dogs by Making Corn Dog Muffins

I love a good hot dog, but it’s one of those things that can burn me out if I’m not careful, especially after the BBQ holiday weekend. Corn dogs are a good variation on the classic frank bun pairing, but can be tricky to make at home. Solution? Make corn dog muffins.

All you need is a good cornbread recipe (or a box of Jiffy corn muffin mix if you’re lazy), hot dogs, and a muffin dish. Fill standard size muffin tins 2/3 full with batter, stick in your favorite 1-inch francs and bake at 425F for 10-12 minutes. Serve with ketchup and mustard and feel a touch of satisfaction with your choice because they are baked, not fried.
