The Secret to Making the Perfect Pizza Dough Is the Right Technique

For the most part, pizza dough consists of just a few basic ingredients. But there is no doubt that some crusts are much better than others. So what’s the difference between good and bad? It’s all about technology.

In this video from YouTube’s ChefSteps, Joe Heffernan of Seattle’s Independent Pizzeria shows you how to make the perfect pizza dough every time. Start by mixing bread flour with a little salt in a large bowl, and combine the baking yeast in a bowl with room temperature water. Make a well in the flour and salt, then add the water and yeast mixture there. Stir lightly with a wooden spoon, then use a hook stand mixer on medium speed until the dough is off the sides of the bowl. Now dust a flat work surface with flour, turn the dough into a ball, and let it ferment for five to eight hours in a closed container.

When finished, divide the dough into portions and gently knead into a ball. When you have a few balls of dough, pour some olive oil into the palm of your hand and lightly coat each ball with oil so it can hold in moisture. Cover the oiled dough balls and refrigerate overnight . When they’re done resting, you can stretch and shape your perfect pizza dough into pizza cakes (but let them stand for about 20 minutes at room temperature before doing so), or store them in the refrigerator for up to three days.
