There are many ways to make great eggs , but truly crispy scrambled eggs are another matter entirely. Here ‘s Chef J. Kenji Lopez-Alta ‘s Fried Egg Method, which perfectly balances crispy egg whites and creamy yolk.

Serious Eats’ Lopez Alt suggests, if you want a fluffy, tender egg, just cook it instead. If you want real fried eggs, Lopez Alt showcases his favorite technique in the video above fromhis YouTube channel . Add two to three tablespoons of vegetable or olive oil to a nonstick skillet and heat the oil over medium to high heat until it starts to shimmer. Swirl the pan to distribute the oil, carefully add the egg and season with salt and pepper. The egg white should bubble in hot oil. Now tilt the skillet so that the butter collects at the bottom, then place the hot butter on top of the egg whites. Remove the crunchy egg from the skillet with a wooden spatula and serve. It will crater, bubble and actually taste fried.
