Make Cashew Egg-Free Caesar Dressing
Caesar dressing may be one of the tastiest salad whey out there, but not everyone can give up the idea of raw eggs. For those a little squeamish (or allergic), there is a simple substitute: cashews.
According to Epicurious’s Tommy Werner, a quarter cup of cashews not only imparts a rich flavor and silky texture, but also acts as an emulsifier to keep the seasoning from flaking. You can use this tip for any dressing that requires raw egg yolk – just aim for a 1/4 cup cashew to 1/2 cup olive oil – or you can use the epic Caesar cashew dressing recipe . Dressings prepared this way will keep in the refrigerator for up to five days, but I doubt they will last that long.
