Add Semolina Flour to Pasta Water for Extra Creamy Sauce

Starchy pasta water is often added to the sauce to make the texture silky and help it stick to the noodles. The more starch, the creamier the sauce. You can use this principle to move your plate of pasta to a more dreamy place, and “super starch” by adding a handful of semolina flour to the cooking water.

This trick from Epicurious works with any type of sauce, milk-free or milk-free. Just add flour before adding pasta and cook as usual. Leave in about half a cup of this super starchy elixir and drain. Then it’s time to put everyone together, stir in the pasta, sauce and water in a skillet and bring everything to a boil. Cook until the sauce thickens and covers your pasta noodles, stirring with tongs every couple of minutes to emulsify everything.
