This is usually done by wrapping the grated potatoes in cheesecloth and a few good wringes. However, this method can be messy, time-consuming, and requires little hand strength. You can also just give them some nice spins on the salad counter to do their job just as well. You can even salt and pepper them before rolling to get a nice, even finish.
