Make the Perfect Fried Rice With a Small Fan

Some people will tell you that you need to use daytime rice to make great fried rice, but that’s not entirely true. You can achieve the perfect chewy texture by using a small table fan to dry freshly cooked rice.

Who wants to wait all day to make fried rice? After extensive testing in his kitchen lab, J. Kenji Lopez-Alt of Serious Eats discovered that there is a better way to cook fried rice – and it requires very little waiting. Cook the rice as usual and place it on the baking sheet. Place the tray under the fan for about an hour. This dries quickly from the surface of the rice, which makes the rice less likely to clump and is more likely to have perfect chewiness when wok-toasted.
