Grind Rice Cakes for a Crispy, Light Breadcrumb Substitute

Sometimes you just want something breaded and crispy for dinner, but what if you (gasp) ran out of bread crumbs? Having a few rice cakes on hand will save the day.

To make a crispy, crunchy bread mixture out of rice cakes, simply take a few, grind them into crumbs, and add the seasoning. When ready, treat them as you would any other mixture of crumbs. As the food is cooked, the already crispy rice will brown, making the frosting very crispy.
