For a skillful drop-shaped smear, pour some sauce onto a plate, rub the back of a spoon, and drag the spoon through the sauce, being careful to maintain full contact with the plate. To prevent meat juices from mixing with your beautiful sauce shapes, clumping up in an ugly way and ruining all your great work, be sure to put the egg whites on a separate plate and always place the plate in the center, not the side.
