Best Way to Make Egg Peeling Easier: Steam, Don’t Boil
The ideal way to make a hard-boiled egg is to steam it and then dip it in ice water. The shell practically slides off the egg and the egg retains its beautiful shape.
Jeff Potter, author of Cooking for Geeks , explains the science behind this in the video above. Cook the egg for about 12 minutes (in a steamer basket or even boiling water) and you won’t have to struggle with peeling the eggshell.
If you insist on boiling, place the eggs when the water is already boiling. You can also shake the shells right away, but steaming may be the easiest way to get hard eggs that are easy to peel.
