Prepare Fried Fish Cakes With Leftover Rice

Cooking some rice early in the week will give you food for a quick lunch at the end of the week. If you have extra rice, risotto, or even leftover fried rice, you can prepare a hearty meal using just a few pantry ingredients.

These fish cakes can be whipped as a simple snack or as a complete compact lunch. Chef Anthony Russo explains:

I’ll take the leftover salmon and cooked short-grain rice, season it with salt and pepper, add Parmesan cheese and some eggs, stir, form into small patties and fry them on both sides. It’s kind of like crab cake, but rice is a star. The cakes really taste good at room temperature, so it’s a great takeout snack. You can do this with shrimp – any seafood goes great with them – or you can use vegetables like squash or squash instead of fish. You just need parmesan and eggs to tie it all together.
