Make Self-Growing Flour With What You Already Have in the Kitchen

Self-rising flour is commonly used in recipes for cookies, pancakes and muffins, but if your kitchen doesn’t have room for multiple flours (or you just don’t feel like going to the store), Epicurious has a simple formula to make your own with AP, a little salt and baking powder:

Add 1 1/2 teaspoons baking powder and 1/4 teaspoon salt to one cup all-purpose flour.

(For those measuring ingredients by weight, this would be 6.9 grams of baking powder and 1.42 grams of salt per 120 grams of all-purpose flour.)

It’s worth noting that self-rising flour is milled from wheat with a lower protein content than all-purpose flour, which makes the baked goods more tender. So while this replacement takes care of the “lift”, the resulting texture may be slightly harsher than what you are aiming for. It’s not necessarily a huge deal, but if you’re trying to make your famous “lighter to air biscuits,” it’s something to have in mind.
