Here’s How to Cook Portobello Mushrooms Properly

Large portobello mushrooms are very meaty and add umami to everything from hamburgers to pasta. But many of us do not understand how to properly prepare and clean them before cooking.

If you think making portobello is as easy as passing it under water before tossing it onto the stove, think again. This America’s Test Kitchen video, which explains which parts of the mushrooms to remove before cooking, how to tell fresh from old portobello, and how to best clean the dirt from portobello, is a good place to start.

In it, he points out the best methods for removing the stem and gills (yes, those gills need to be removed), as well as why and how to slightly cut the tops of the mushrooms when cooking them whole.
