Reuse Marinade in Tofu Recipes After Cooking

When cooking meat or fish, never reuse raw marinade. However, marinade with tofu does not pose the same health hazard. Add the marinade back to the dish at the end of cooking to enhance the flavor of the recipe.

Tofu takes on the flavor of whatever you cook. Unlike meat or fish, tofu can be eaten raw, so it’s easy to reuse the marinade. Serious Eats explains:

A good marinade is a good starting point, and grilling this tofu with the marinade added to it will only enhance the flavor of this marinade. At the same time, he will also change it, destroying its more subtle, mutable elements. By retaining some of the marinade and reapplying it after the tofu is cooked, you double the flavor.

Obviously, if your marinade contains anything dangerous to eat raw, do not reuse the marinade. Follow the link for more tips for making tofu.
