Make Lots of Perfectly Chunky Guacamole With the Wire Cooling Grill
Whether you’re going to watch the March Madness with friends or going out for lunch, there will always be an opportunity to showcase your guacamole cooking skills . If, like us, you take a certain pride in being able to whisper an avocado, here’s a trick that will take your guacamole game to the next level.
Dana Cowin, Editor-in-Chief of Food & Wine Magazine and author of Dealing with Mistakes in the Kitchen , shared the question, “Why didn’t I think about it?” the moment on Instagram as she watched New York City chef Alex Stupak prepare guacamole for the crowd.
Here’s what Stupak does: He scoops the pulp out of half a dozen avocados, places them on a cooling rack with a 1/4-inch square grid, and then places it in a half-pot already filled with the other ingredients needed for guacamole (like cilantro and onions). Push the avocado through a wire mesh, stir, and in seconds you have a large batch of guacamole that is uniform in texture, not too smooth, but not too coarse.
This trick is probably not very useful if you are just making guacamole for yourself (unless you really like guacamole and are not very hungry, in which case we are not judging), but it is a pretty brilliant shortcut for making a large batch of guacamole overnight tacos , bash Cinco de Mayo, spring picnic, whatever. And this same tip can be easily applied to salads, tacos, or anything else that requires a lot of sliced avocado.
