Microwave Prosciutto Chips

Prosciutto chips clearly evoke the atmosphere of the mid-90s. It seems a little wrong, even a little wasteful, to take a thin, silky piece of paper-thin jerky and turn the fat into meat chips. But it’s also delicious. Most people cook prosciutto chips in the oven , and weirdos cook them in a waffle iron , but smart geniuses cook them in the microwave.

The first time I cooked salty meat chips in the microwave this morning, I was amazed. Yes, it was incredibly useful, but it also made the crunchiest prosciutto ham I have ever had the pleasure of breaking with my teeth. The microwave effectively sautéed the meat on its own fat, leaving everything blistered and cracked rather than tough and tough. Basically, the chips obtained from the microwave were better than the ones I have ever cooked in the oven, and it took about half a minute to do it.

All you have to do is loosely wrap the slice of ham with a paper towel, microwave it on full power for 30-40 seconds, and then let it sit at room temperature for about five seconds to finish the crisp. You can eat several if you need a bunch, but you may need to add an extra 5-10 seconds per slice of prosciutto (the more prosicutto there is, the more moisture will be released and the longer it will take.).

Once you’ve got the required amount of prosciutto chips, crush them and sprinkle them with salted splinters on salads, tomato toast, and bowls of pasta (carbonara is fine for whipping). You can also just eat them like any other potato chips.
