These Birthday Cake Waffles Are Almost Too Easy.

I’ve made waffles in many things , but few waffles, which is odd given the intended purpose of the waffle maker. I can count on the fingers of one hand how many times I’ve baked real waffles, and I rarely do anything that needs to be poured onto plates (I usually just smash the food). However, batter works well in a waffle iron—that’s what they’re designed for—and cake batter does it exceptionally well.

Waffle cake – Caffles? Cupcakes? I’m not good at it – they’re almost too easy to make. Knead the dough according to the instructions on the package, pour it into a hot waffle iron, let stand for a few minutes and you’re done. The waffles come out tender and spongy (in a good way) and nicely browned, allowing you to quench your cake cravings in less than 10 minutes. (This is both wonderful and terrible information, depending on how often you experience cake cravings.)

One word of caution: Several cake batter waffle recipes will ask you to coat the plates of your waffle iron with cooking spray. If your waffle iron has a non-stick coating (and most do), don’t do this. Cooking spray can damage the non-stick coating (on anything), so just let the Teflon do its thing without the aerosol interfering.

You can use any flavor of cake mix, but I like Funfetti. It’s sweet and festive and makes the perfect birthday breakfast, especially if you finish it with a heaping pile of whipped cream, some sprinkles, and bright red cherries with ice cream. If you don’t feel like eating cake for breakfast, I can’t understand, but you can lean even more towards dessert by adding a scoop of ice cream, a dash of chocolate sauce, or both.

Easy Birthday Cake Wafers (12 small waffles or 2-3 large waffles)

Ingredients:

  • 1 package of Funfetti baking mix (or any other baking mix)
  • Ingredients listed on the cake box
  • Whipped cream, sprinkles and ice cream cherries for decoration

Heat up the waffle iron. My new waffle iron only has one setting (on), but if you can adjust the heat, set it to medium-high.

Prepare the cake batter according to the instructions on the box, then pour it into the center of the waffle iron. You do not need to complete it completely. The plates will push the dough out towards the edges and the dough will expand as it cooks, so fill it two-thirds full first and see how it goes, then adjust if necessary.

Cook for 3-4 minutes until the steam from the waffles has almost subsided and the waffles are golden brown. Finish with a fluffy heap of whipped cream, some sprinkles and cherries.
