Make Oatmeal That Will Kick Your Ass

Blueberries, bananas, brown sugar or other subtle sweets are typical breakfast companions of oatmeal. This is normal, but almost immediately leads me to oatmeal exhaustion. I don’t like sugary breakfasts; I need something tasty in the morning. Not just a little. I love umami to pat me on the back and wake me up . Oatmeal might just kick ass if you give it powerful partners to work with, but with oats, you need to get your hands off the wheel.

The idea that oatmeal should be sweet is complete nonsense. I added an egg (or just an egg yolk ) to the mixture and treated it to risotto for a hearty savory kick. But it wasn’t until I tried The Kitchn’s James Park’s cheesy, savory kimchi oatmeal that I realized I could go so much further with my savory oats. Really, oats should just stop trying to be the main event. They should not form the main part of the dish. Instead of making a bowl that was 90% oatmeal and 10% savory side dishes, I changed the balance of the weights to be closer to 50/50.

I fried crumbled sausage with sambal. I brought kimchi. I boiled an egg, chopped cilantro, green onion and fresh ginger, and took out a container of fried garlic. My partner entered the room and immediately commented, “What smells so good?” He was completely confused when I said that I was making oatmeal – oatmeal had never smelled like this before. I boiled oatmeal with chicken bouillon cube (no reason to miss out on a delicious opportunity) and made a great meal that I was looking forward to.

It was a bowl of oatmeal, which was not only aromatic and salty, but completely destroyed all the norms of oats. Half a cup of oatmeal took a supporting role, supporting every scoop of egg, sausage and garlic, and providing a little relief from the rising heat of the sambal. One thought that never crossed my mind? “It’s soft and fresh.”

To make a bowl of oatmeal that will kick your butt, use the ingredients you would add to a sandwich for breakfast or pizza. These are not side dishes; they are the main ingredients. (If this bowl were a movie, the ingredients would make a savory ensemble.) Oatmeal should only take up half of your bowl, and the rest should be cheese, bacon, pepperoni, fried tomatoes, olives, pickles, and hot sauce. .

Decide if you want to toss everything into a pot of oatmeal and mix it in so the cheese melts and all the flavors blend in, or if you want to add each ingredient to your own little area and create different combinations in each spoonful. I’ve added some of my favorite spicy ingredients to this recipe, but the options are truly endless. Next time I’m thinking of making oatmeal cheeseburger style.

real oatmeal

Ingredients:

  • sausage 1 link without casing
  • 1 teaspoon sambal
  • 1 tablespoon kimchi
  • ½ cup old fashioned oatmeal
  • 1 chicken stock cube
  • 1 glass of water
  • 1 green onion, sliced
  • 1 half-inch piece fresh ginger, chopped into matchsticks
  • 1 egg, steamed or boiled and cut in half
  • 1 teaspoon roasted garlic
  • Pinch of freshly picked cilantro

Fry the sausage in a skillet over medium heat and break it into small pieces. When it’s half cooked, add the sambal and continue frying and breaking it up. Move the sausage to one side of the pan and add the kimchi to brown and heat through.

In a small saucepan over medium heat, bring the water and the bullion cube to a boil. Add oatmeal and stir. Boil as usual and turn off the heat when it thickens. Serve oatmeal in a bowl and top with sausage crumbs and sambal oil, kimchi, egg halves, green onions, ginger, cilantro and roasted garlic.
