Use Panko to Add a Buttery Crunch to Scrambled and Scrambled Eggs
Eggs and toast are almost perfect food. It’s easy, cheap, satisfying, delicious, and nice in texture. Soft scrambled eggs or scrambled eggs with yolk on crispy toasted bread make my mouth happy, but you can simplify the process with toasted breadcrumbs.
There are two ways to use panko to give your eggs a great buttery crunch. In both cases, you will start by frying them in a large amount of oil. Once they turn golden, you can either crack the egg right on top of the crispy crumbs or blend them into a soft scramble.

The yolk is the best part of a fried egg, but frying the whole thing on top of brown panko butter makes the white so much more appealing. If you are familiar with friko egg , then it is exactly the same, only bread is the base, not cheese. It’s like eating a fried egg on toast, except the texture is even bigger thanks to the small size of the crumbs. (Smaller particles almost always turn into more surface area for browning.)
Fried eggs in a breadcrumbs
Ingredients:
- 2 tablespoons butter
- 3 tablespoons panko breadcrumbs
- 2 eggs
- Salt pepper
Add butter to a nonstick skillet over medium heat. Once it starts to foam, add the crumbs and sprinkle in an even layer over the butter. Cook for two minutes until the mixture smells of nuts and toast, then crack two eggs over the crumbs.
Season the eggs with salt and pepper and cover the skillet with a lid or heatproof plate. Cook for 3-5 minutes until egg whites are fully set. Transfer to a plate and serve with “extra” crumbs and toasted butter on top.

This recipe, which I first saw via @intothesauce on TikTok, flips the classic egg-on-toast format by making eggs a bread-making tool.
I made panko spit without cheese, because cheese can hide so many sins, and it was buttery, delicious, and enjoyable. Also, I followed the directions pretty closely, although I did stir the panko a few times to make sure it browned evenly, as the crispy panko ensures the crumbs don’t go soft in the eggs. I’ll add cheese next time because I love cheese, but cheese lovers should rejoice in the fact that they don’t need it.
Panko scrambled eggs
Ingredients:
- 2 tablespoons butter
- 2 tablespoons panko breadcrumbs
- 2 eggs
- Large pinch of salt
Melt the butter in a non-stick skillet over medium heat. Once it starts foaming, add the crumbs and fry, stirring once or twice, until they are firm golden brown. Whisk the eggs with the salt in the jar , then add them to the skillet, pushing them in with large, sweeping motions until they set. Serve immediately.
