Make Your Scrambled Eggs Creamier and Spicier With Buffalo Sauce

Buffalo sauce and chicken are inextricably linked. Oily pepper sauce helps drumettes and flats fulfill their higher calling, but it’s not limited to this. This cute bird also gave us eggs, which can also be buffalo. With just one store-bought ingredient, you can turn an ordinary breakfast into a buffalo omelet.

I fully expected this dish to taste good, but I didn’t foresee the positive effect of the buffalo milk sauce on the texture of my scrambled eggs. I usually use a low and slow cooking method with frequent stirring to get a small and soft curd. With the first bite, I knew something unexpected had happened. The eggs had the rubbery texture that you get when you add lots of tasty fats like heavy cream and cheese to your omelet. It was silky and soft, reminiscent of homemade ricotta cheese, but tasted like hot wings from my favorite dive bar.

For those who are wondering “why not just use hot sauce?”, I urge you not to. You are missing out on a truly luxurious consistency. Store-bought buffalo sauces typically contain additional spices, sugars, fats, and most importantly, thickeners such as xanthan gum or cornstarch , not found in standard hot sauces. Pepper, sugar, and spices give it a buffalo flavor, so you don’t need to season your eggs extra. Thickeners mix and disperse the egg whites, preventing the texture from getting too hard, and add some starch gelatinization . For extra spice, be sure to add hot sauce, but I would not call it a replacement for thickened buffalo milk sauce.

I used medium Buffalo Wild Wings sauce . It has the buffalo scent that I’m looking for and the constant warm warmth that makes my whole family happy. Whipping up a bowl of fluffy buffalo eggs is easy. Take your favorite store-bought buffalo sauce and beat it with raw eggs until it’s completely dissolved and the eggs look like runny Cheetos. Prepare as usual. Depending on the strength of the sauce you choose, half or one full tablespoon per egg will suffice. To truly capture the taste of buffalo, add toppings such as chopped green onions or crumbled blue cheese and serve with carrots and celery sticks.

Creamy buffalo scrambled eggs

Ingredients:

  • 3 large eggs
  • 2 tablespoons Buffalo Sauce (I used Medium Buffalo Wild Wings Sauce )
  • 1 tablespoon chopped green onion
  • Carrot sticks and celery sticks
  • Butter or pan oil

Whisk eggs and buffalo sauce vigorously until fully combined and frothy. Butter or oil frying pan over low heat. Pour the eggs into the skillet and stir frequently until small, creamy egg flakes form. Sprinkle with chopped green onions and serve with carrot and celery sticks.
