Forget the Frosting and Give Your Cupcakes the Lamington Treatment
A huge wad of buttercream frosting looks inviting on a cupcake, but my quick way to eat a cupcake like this is to lift the liner off the bottom, use the liner to remove the icing, and then toss the liner and frosting into a burning trash can. . This will keep your fingers clean. Or, if you don’t like buttercream either, you can avoid this wasteful affair and decorate your cupcakes with a sweet but not sugary lamington-style topping.
Lamington is a delicious Australian butter cake that is cut into single-serving squares and usually topped with chocolate icing, although it is also common to add a layer of jam inside or even cover the cake with jam instead of chocolate. After covering the cake with a thin layer of your chosen filling, the entire cube is rolled in grated coconut. The combination of buttery cake, chocolate frosting and a subtle coconut accent is much more balanced than a thick smear of buttercream frosting.
Processing cupcakes with a lamington is surprisingly quick and requires no decorating skills because the coconut hides your mistakes. Lamingtons also travel well without getting hit. To make your own, bake a batch of vanilla, butter, or yellow cupcakes. Once they are cool, place them in the freezer for about 45 minutes. This cooling time makes them decorate three times faster and the world is neater. If you are freezing them at room temperature, they must be handled with care to prevent accidental tearing and tearing. (This applies to most cakes.)
Using a butter knife or small curved spatula, spread a thin layer of lamington chocolate frosting , raspberry jam, or Nutella (my favorite chocolate frosting) over the half-frozen cake.
