Make Your Own Two-Ingredient Carb-Free Egg Wraps

I’m not on a no-carb diet, or even a low-carb diet, but I’m on a “eat as much protein as I can in a day” diet. (I don’t know if you guys have heard, but I started powerlifting and made it my identity.) Eggs play a big role here because their versatility makes them very easy to add to all sorts of dishes.

One popular way to maximize protein and cut carbs is to allow protein to replace carbs. Call it the Double Down effect, but there seems to be a protein substitute for just about every type of passenger car you can think of, be it bread, pasta, or tortillas.

It takes a non-zero amount of food knowledge to create pasta and bread, but an egg wrap (or egg tortilla) is something you can very easily recreate in the comfort of your own kitchen. While most mass-produced egg wrappers ( from Trader Joe’s , for example) contain some sort of alternative flour to make them a little more stable, you really don’t need all of that. All you have to do is make a very thin omelet and cook it gently over medium heat. Let cool slightly, then fill and roll up.

Making egg wrappers at home also means you don’t have to settle for soft egg wrappers. Obviously you should add salt, but don’t fall asleep on a pinch of monosodium glutamate, a dash of hot sauce, or any other seasoning you think will have an effect.

You also don’t need to use egg wrappers as the outer layer, but you can place a flat egg inside the tortilla so the egg stays in the breakfast burrito and also leaves more room for other toppings like bacon, cheese, and potatoes.

Plain Carb Free Egg Wraps (per wrap)

Ingredients:

  • 2 eggs
  • 1 teaspoon water
  • Large pinch of salt
  • pinch of hot sauce

Heat a 7-inch non-stick skillet over medium heat. Add all ingredients to a jar or other airtight container and shake vigorously to combine. Pour the mixture into the pan and stir gently to create an even layer.

Cook, undisturbed, for about three minutes, until the egg is set and almost dry on top. Gently flip with a wide silicone spatula and cook for another minute. Remove cling film from plate, let cool for about a minute, then fill and roll, baby.
