The Best Way to Keep Cheese Fresh (no Expensive Cheese Papers)
When you’re spending money on cheese at $ 20 a pound, you’ll want to keep it fresh for as long as possible. But that doesn’t mean you need to spend another $ 9 on a box of cheese papers . In fact, you can store cheese well with foods you probably already have at home.
Cheese merchant Jordan Edwards gives Epicurious some education about cheese storage and confirms what we suspected from the start: that you don’t have to spend money on this fancy box of papers. Instead, you can recreate the cheese paper effect by wrapping the cheese with wax paper and then a layer of plastic wrap.
However, covering the cheese with plastic wrap is a very bad idea, and putting the cheese in plastic bags with zippers is even worse:
The problem with plastic is that cheese is constantly changing. Evaporation occurs, and the plastic film does not allow moisture to pass through. So the cheese is in the water.
It turns out that those pieces of cheese in the store, which are tightly closed with plastic, also acquire a plastic aftertaste. To save him, he suggests taking the cheese out of the plastic and lightly scrubbing the cheese to remove the outer layer.
