Easily Freeze Muffins by Hand by Dipping Them
Cupcake without icing is no longer the same. But many of us find it difficult to apply it without creating a mess. There is a simple solution: heat the frosting and then dip the cake by hand.
It can take a long time to freeze the cake properly. Or you can try this heating and immersion method as described at WKDQ.com:
I started with the usual glaze – nothing special. Then I heated it in a glass dish in the microwave for 15-30 seconds while defrosting. You may need to add more, depending on how much frosting you use at a time. Heat the frosting until thick, but slightly softer than usual. If you get very hot, refrigerate for 3-5 minutes. Take each cupcake and dip it in the frosting using the swirl effect to keep the drops dripping clean. Wait until cool and add again to get a clean overall look.
Of course, maintaining the correct consistency of the glaze can be a completely different obstacle. But if you’re having trouble freezing the old fashioned way, this method may be easier for you. Check out the full publication for more details.
