Make Flavorful Hummus From Just About Anything With a Simple Formula

Hummus recipes can be found online, but if you regularly cook and eat this Middle Eastern dish, you may need an easier way. Hillary Pollack of Food52 offers a simple equation that doesn’t require you to link to any recipe.

The formula requires 2 cups of chickpeas, about 1/4 cup of olive oil, a few tablespoons of tahini, lemon juice, minced clove of garlic, and a pinch of salt. Anything else – such as spices such as pepper, cumin, or zaatar – is optional and to taste.

Perhaps the most important takeaway is the idea that you can make hummus from anything that needs to be used in the refrigerator or pantry. She writes:

I might find a half-used can of pesto or spice mixes and decide to mix them up. If you’re not a big chickpea fan or are tired of the classic hummus, you can substitute half that amount for fried vegetables. I have found more starchy vegetables like sweet potatoes, beets, or carrots to work best. Chop carrots or sweet potatoes, stir in olive oil, salt and pepper and bake in a hot oven at 375 to 425 degrees Fahrenheit until soft and caramelized.

This seems like a great way to make hummus out of just about any vegetable (or even dense fruit). Pumpkin kaboch hummus, edamame hummus, cauliflower hummus baked with hazelnuts: the options are endless.
