Cooking an Egg Following the Model of Julia Child: Quickly Boil It Before Boiling
Cooking legends Julia Child and Jacques Pepin demonstrate in this video how they boil eggs. Julia, in particular, shares a trick you might want to use: Boil an egg for ten seconds before cooking it.
First, pierce the egg with the large end to release air that could crack. Then let it simmer quickly. It helps the egg maintain its egg shape when poached, like the metal egg poacher, Child says.
Pepin does it the old fashioned way, without boiling for ten seconds, but whichever method works for you, be it with a strainer , in a frying pan , in the microwave, or even in a muffin pan , do it. !
