Some soups are much better when they are thicker. Adding some blended white beans can thicken foods without disturbing the flavor, and is ideal for gluten-free and vegan recipes.

Soups can be thickened with flour, cornstarch, and even butter, but this leaves some people with dietary restrictions unlucky. Jessica Goldman Fung of The Kitchn believes a mixed slurry of white beans is the ideal alternative. Mixing some of the soup with a hand blender can help too, but sometimes you need to add something to make it appear creamier rather than thicker. White beans provide creaminess without a dairy or strong aftertaste.
