This Video Shows How Easy Rice Pudding Is Without a Recipe.

It’s easy to dive into the world of cookies, cake and ice cream while forgetting about one of the world’s simplest treats: rice pudding. Plus, it’s one of the easiest and quickest sweets to make, as evidenced by this OTC recipe from Food52.

In this video, Food52 founders Amanda Hesser and Merrill Stubbs share their method of making rice pudding that is adaptable and easy to fold on a whim. Our technique for rice pudding, says Amanda, is basically no technique.

Their basic plan: start with a handful of arborio rice per person, then pour in the milk of your choice using the approximate proportion of one part rice to four parts milk. Add a sweetener such as sugar or honey to taste; any other flavors you want (three suggestions of them: vanilla-cinnamon-raisins, green cardamom-lemon Meyer’s or cocoa powder with almond extract). Simmer on the stove or in the oven until rice is cooked; always finish with a pinch of salt for more depth.
