Use a Palm Test to Determine the Correct Temperature for Your Grill
Knowing when to grill and when to wait or turn down the heat is what separates a perfectly cooked hamburger from an undercooked or hockey puck. Here’s a quick test to get the timing right.

While holding it there, count how many seconds (one thousand, two thousand, three thousand …) it will take before you feel the need to remove your hand. Then use the time to decipher the cooking heat:
2 seconds = strong fire
3-4 seconds = medium-high fire
5-6 seconds = medium heat
7-8 seconds = medium-low fire
Infinitely = low heat
This can be useful when you are cooking delicate proteins or vegetables on the grill and you need a weak fire, or when you begin to cook the steaks on the weak, and then finish on a high heat.
