A Zest for Frozen Anchovies to Add Size to Pizzas and More

Umami-rich anchovies can add zest to a wide variety of foods, but nibbling at giant chunks of the salty, spicy ingredient can turn off even the most avid anchovy lovers. But here’s one easy way to add a more subtle flavor.

Alex Talbot of the groundbreaking culinary blog Ideas in Food has come up with a brilliant way to enjoy softer, more evenly distributed anchovy flavor: Put the anchovies (and their oil) in a mold in the freezer, then grate over pizza when they’re frozen.

We love this idea so much that we plan to try it not only with pizza, but also with other anchovy dishes such as puttanesca pasta, Caesar salad and eggs in purgatory.
