When You Have a Surplus of Mint, Make Peppermint Sugar
Mint grows rapidly. Sometimes it grows faster than you can use it. If you have a surplus of peppermint on hand, make a small treat with it: peppermint sugar.
When you’ve got a ton of extra mint, there are tons of creative uses for it . One fun option that TheKitchn recommends? Making mint sugar, which is basically sugar with mint added.
Whatever you call it, it’s pretty simple to do:
Take leaves from about four sprigs of mint and either chop them up in a food processor or press down on them with a mortar and pestle. After you have damaged the mint and chopped it coarsely, slowly add 1 cup of sugar, stirring and stirring. Cover with a lid and wait 2-3 days for the oils to infuse with the sugar. Store in a cool dry place and use within a month. Herbal sugar is a great gift.
