Make Chips From Any Leafy Greens, Alton Brown’s Way

Vegetable chips are a healthier way to quench your thirst for a salty, crispy snack. Fortunately, they are easy to make. Here is Alton Brown’s method for turning any leafy greens like mustard greens, Swiss chard, kale greens, and of course kale into chips.

  1. Preheat oven to 300 degrees (~ 150 degrees C).
  2. Wash and dry the herbs. Make sure they are as dry as possible or the oil won’t cover them later.
  3. Remove the leaves from the stems and cut the leaves into 1/2-inch pieces.
  4. Toss the leaves with the olive oil and salt, then place them on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes, until they begin to brown around the edges.

The best thing about this method is that you can apply it to just about any leafy greenery you have. You can also add chips to pasta, sandwiches, or just for a snack. Check out the link for the full video.
