How to Perfectly Cook a Whole Brick Chicken

Here’s an extremely easy way to cook a whole grilled chicken – and it’s really tasty and juicy (we know that because we ate two of these after filming ended).

1. Cut a spine for it.

2. Break the sternum with the palm of your hand.

3. Wrap the brick with foil.

4. Place the chicken on the wire rack (coals at full capacity) and the brick on the chicken.

4. Leave for about an hour (depending on the size of the chicken) until golden brown. Note: Do not turn the chicken over. The brick will get so hot that it will ignite the other side.

Extra Bonus Points: Brine the chicken the night before (or use this trick if you’re short on time).
