Lindsay-Jean Hard of Food52 suggests using shiitake stalks to get the same umami flavor as if you were using whole shiitake mushrooms . When the stems give the broth their flavor, remove them. Once you’ve got your broth, you can use it for anything from the base for mushroom soup to the flavor of just about any sauce.
