Add a Little Oil to the Oil When Frying to Reduce Burnt Flavor
If you don’t like how the butter turns brown and tastes burnt before you even cook in it, add a tablespoon of butter to the skillet, as Julia Child shows us in this video on stewing chicken.
This is just a quick tip, but if you didn’t already know it, it can get rid of one common irritation when cooking. As usual, Child’s video offers many other great cooking tips, such as folding a chicken wing into a flat shape before placing it in the pan.

Update: As commenters pointed out, what this does is actually dilute the oil, so there is less blackened taste rather than preventing it from sticking.
