Fast Salinization of Anything With One Simple Ratio
Whether it’s zucchini, watermelon zest, or plain old cucumbers, we friends can (quickly) pickle them. In anticipation of a bumper crop, the smart folks at Epicurious have come up with a simple pickling base that lets you marinate whatever you want when the mood moves.
Check out the link below to find out more, but the ratio is pretty easy to remember: it’s just equal parts vinegar and water and four times the amount of sugar for salt (start with two tablespoons of salt and half a glass of sugar, and increase as needed.) From there, you can add. classics like mustard seeds, garlic, dill, or something more interesting with chili, ginger or horseradish. Heat it all up, pour it into a jar, and in a few hours you will have delicious homemade pickles.
