Roast Meat Quickly in the Broiler, Not on the Stove

Roasting meat gives it a wonderful crust and rich flavor, but traditional stove-top cooking sometimes results in splattering and / or having to work in batches. A faster, less messy option is to roast the meat in a brazier.

Kitchn points out this simple tip in her Korean simmered short ribs recipe (shown above, don’t they look amazing?). You can grill the meat for a few minutes on each side in an oven-safe pan and leave the juicy brown chunks on the bottom to remove the frosting.
