Make One Serving of This Pepper, Enjoy It As a Different Dish All Week

If you’re constantly on the lookout for weekend projects that will make your weekday cooking easier , here’s another one to add to your list: Peperonata, a Southern Italian pepper stew that works well with just about anything: appetizers, side dishes , the main course. , or pasta sauce.

Food52 columnist Emiko Davis notes that while other ingredients such as tomatoes, onions and herbs play a role, the essence of the peperonata comes from multi-colored ripe bell peppers that are boiled until smoothly tender, savory and sweet. She writes about their versatility :

I eat it on top of toasted bread as a snack or quick lunch; as a side dish with simply fried meat or fish; or just as it is, with plenty of bread to wipe off the juices and possibly a large scoop of buffalo mozzarella.
