Add Grated Cheese to the Pasta Before the Sauce for a Better Mix

Pasta is usually served with grated cheese on top of the sauce, but the venerable Italian cookbook Silver Spoon suggests doing the opposite.

Food52 explains:

In fact, the pasta should be sprinkled with cheese before the sauce , which then becomes soft and smooth.

You can always add the cheese on top if you like the way the grated cheese looks!
