It’s all about the pH in your cheese. Cheese with too low a pH will harden and smear all over. Cheese with too high a pH will not be able to stick together, making it unlikely that your cheese will stretch when you separate the sandwich halves. The ideal range is a pH of 5.3 to 5.5 and includes cheeses such as manchego, gruyere, gouda, and soft cheddar (not spicy). These processed cheese chunks are also fine as a last resort, but you’ll miss out on a ton of flavor. Finally, if you want a little creaminess, a pinch of cream cheese can work wonders.
