Carmelizing White Chocolate for Deep Complex Flavor
I never thought of white chocolate as “real chocolate”. Sweetness aside, it usually doesn’t have much flavor, but caramelization can change it from “one note” to “surprisingly complex.”
To do this, mix 12 ounces of good quality white chocolate with 1/4 cup conconut butter in a glass baking dish and heat to 250 °, stirring every 15 minutes. When the chocolate has reached the color of a “strong latte” (about 45-60 minutes), you’re done. Use in truffles, cookie icing, ice cream or Bon Appetit coconut-lime snowballs .
