Skip the Expensive Roasting Dish and Use a Wire Rack and Baking Sheet Instead.
The roasting rack and aluminum pan are not only cheaper together than many frypots, but in most cases the combination works better than the broiler.
J. Kenji Lopez-Alt of Serious Eats explains:
it circulates air more evenly and transfers heat energy to the bottom of the roast, resulting in a more even roast and crispier poultry skin.
[…] Even when you are frying vegetables, the aluminum pan shortens the cooking time, offers more space than a standard pan, traps less steam and is easier to handle.
There are a few cases where a roaster is the best tool for the job, such as roasting vegetables over meat. However, in such cases, a disposable aluminum pan will do.
