Peanuts contain 13 unique proteins that are known to cause allergic reactions, and these proteins are not easily broken down in the intestines. This means that peanut proteins entering the bloodstream can cause allergic reactions after food has been digested. Therefore, people with peanut allergies should not lose their vigilance even some time after consuming new products if the ingredients and manufacturing process are unknown.
In addition, in people with severe peanut allergies, even the smallest exposure – inhaling peanuts or touching someone who has just eaten peanuts – can cause a reaction.
As for why so many children are now allergic to peanuts, scientists found that children who avoided peanuts at a young age were actually more likely to develop peanut allergies than those who were exposed to peanuts at an early age.This research is described more fully in this video .
