Turn Leftover Pasta Into a Topped Breakfast Frittata
If you have leftover pasta or have cooked too much for your dish, turn it into a light breakfast by tossing it into frittata. Regular pasta or pasta with sauce or other ingredients mixed with it is fair game.
The pasta itself will make the frittata more satisfying, and the frittata will turn it into a whole new, more satisfying dish than it would be with eggs. Make frittata as usual , then pour the egg mixture over the pasta and bake. Plain pasta with butter sauce or just olive oil and vegetables are best for plain frittata, but you can try pasta with tomato sauce and watch it set. Since both dishes scale well, this is the perfect mix if you’re feeding a large group or preparing breakfast or brunch for the crowd. Pasta for dinner and frittata for breakfast the next day.
