Like any red-blooded American, I love a good fluffy tortilla, but sometimes I crave tender, more subtle delicacies like English pancakes or crepes. Some people have slight flipping problems, but the video above makes it easier; like so many things, it’s all about the wrist.
For easier flipping, you’ll want to use either a pancake pan (which is non-stick and very shallow) or a regular non-stick pan with sloping sides. Avoid pots with straight sides, as they will interfere with turning.
There is a great pancake recipe in the video above, but the flipping technique will work for any thin pancake. First coat the skillet with a thin layer of butter, the frozen stick will allow you to get the amount you want. Scoop the dough into it and stir to coat the pan. When the top of the dough is dry and the edges are golden brown, you can turn it over. Shake the pan lightly to make sure everything is wobbling (knock on the stand if it sticks), then circle your hand downward and backward, as if you were rotating the handle. … This may seem a little intimidating at first, but the faster you go, the better. Using a spatula may seem like an easier and safer way, but I’ve found that after a little practice, this method results in prettier crepes and crepes that are less likely to curl or break. Plus, it just looks cool, which is a nice bonus.
